Gluten-Free Seedy Crackers

Ingredients
  • 1C Gluten-free Oats
  • ½C Pepitas (pumpkin seeds)
  • ⅓C Sunflower Seeds
  • 3T Chia Seeds
  • 3T Ground Flaxseed
  • 3T Sesame Seeds
  • 1T Poppy Seeds
  • 1t Salt
  • 2T Olive Oil
  • 1T Maple Syrup or Honey
  • ¾C Water
Instructions
  1. Preheat oven to 375
  2. Combine dry ingredients in a mixing bowl.
  3. Add wet ingredients, stir to combine and let stand 10 minutes.
  4. Divide mixture in half
  5. Put each half on a separate baking sheet, lined with parchment
  6. Gently press and spread out until it's the thickness of a cracker (about ¼")
  7. Bake for 15-20 minutes.
  8. Remove from oven and carefully flip the cracker over.
  9. Return to oven and bake 15-20 minutes longer, until edges are crisp and brown.
  10. Allow to cool and cut or break into smaller pieces.
