Roasted Salmon with Lemon-Garlic Butter and Superfood Slaw

Ingredients
  • 1 lb. fillet Wild Alaskan Salmon
  • Salt
  • Black Pepper
  • Olive Oil
  • Lemon Garlic Butter
  • 2 cloves fresh garlic, chopped
  • 2T Butter
  • 2T Olive Oil
  • Juice of half a lemon
  • Superfood Slaw
  • 4-5 C Broccoslaw
  • 1C Shredded Carrots
  • 1C Shredded Purple Cabbage
  • 1 Apple, peeled and cut into matchstick size pieces
  • 1" Fresh Ginger, minced
  • 1 Handful Fresh Cilantro, chopped
  • 4 Scallions, diced
  • ¼ C (approx) Apple Cider Vinegar
  • 2-3T Extra Virgon Olive Oil
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350
  2. Place salmon, skin-side down on parchment-lined baking sheet.
  3. Brush with olive oil.
  4. Sprinkle with salt and pepper.
  5. Roast approx 13 minutes, until fish is opaque.
  6. Superfood Slaw
  7. Combine all ingredients in a large bowl.
  8. Toss with apple cider vinegar and olive oil.
  9. Add salt and pepper to taste.
  10. Enjoy!
