Roasted Salmon with Lemon-Garlic Butter and Superfood Slaw |

- 1 lb. fillet Wild Alaskan Salmon
- Salt
- Black Pepper
- Olive Oil
- Lemon Garlic Butter
- 2 cloves fresh garlic, chopped
- 2T Butter
- 2T Olive Oil
- Juice of half a lemon
- Superfood Slaw
- 4-5 C Broccoslaw
- 1C Shredded Carrots
- 1C Shredded Purple Cabbage
- 1 Apple, peeled and cut into matchstick size pieces
- 1" Fresh Ginger, minced
- 1 Handful Fresh Cilantro, chopped
- 4 Scallions, diced
- ¼ C (approx) Apple Cider Vinegar
- 2-3T Extra Virgon Olive Oil
- Salt and pepper to taste
- Preheat oven to 350
- Place salmon, skin-side down on parchment-lined baking sheet.
- Brush with olive oil.
- Sprinkle with salt and pepper.
- Roast approx 13 minutes, until fish is opaque.
- Superfood Slaw
- Combine all ingredients in a large bowl.
- Toss with apple cider vinegar and olive oil.
- Add salt and pepper to taste.
- Enjoy!
