It’s July and time to sit down with Deborah, Coco and you for a little catch-up sesh over a nice beverage. I’m going with some African coffee I picked up while on vacay, splashed with half & half + collagen.
This was the view from our villa on the game reserve in Africa. It was a great place to relax after the morning game drive. I still owe you a travel recap, one of these days.
Over coffee I’d tell you we’re heading off on a tour of colleges soon with Thing 2. It’s time to start the selection process with her and I’m excited. I want to savor every moment because it all slips away so quickly.
Over coffee I’d tell you that the Caveman and his twin brother celebrated birthdays on July 3. Every year I ask him what kind of cake he wants and every year he says Angel Food. Typically I either grab him a mediocre grocery-store angel food cake or ignore the request entirely and make a cookie cake, since those are popular around here. This year I decided to actually make an attempt at homemade Angel Food. I think it was the 12 egg whites that scared me away. Who wants 12 extra egg yolks laying around? Not me, nor do I care to waste them. Well after careful egg separating, sugar grinding, folding, baking and letting the cake cool upside down for no less than 3 hours, I’m happy to say my Angel Food cake turned out great. It was a ton of work though.
Over coffee I’d tell you I went to the eye doc last week and it turns out one of my eyes got “stronger” so the dr. backed off the strength of my contact prescription. I knew this was a thing in children, but I did not expect this for myself!

I had to get a different Rx for my computer classes which I think was less powerful. I’m still adjusting to them.
Does Thing 2 want to keep up with music in college?

Something I forgot to ask earlier: which hotel/rental did you stay at in Cape Town? And what did you think of it? (I’m always looking out for recommended places for friends and family)

I already said this in response to a comment you left on my blog, but I’m SO EXCITED that Thing 2 is considering FSU! It’s a great school and beautiful campus. This might seem obvious- but it’s going to be hot AF when you’re there, which could cloud your appreciation a little. Just keep in mind that for most of the school year, the weather will be BEAUTIFUL. She would really love it, after all those gloomy midwestern winters. I can’t wait to hear all about this! The college selection process is so stressful, but also exciting and fun.

We’ve got some college visits planned too – still can’t believe we’ve reached this point. As you said, I’m going to do my best to savor the time.

Sadly, no trips. I was going to go with Mr. Judy to see his mom & sister, but now with Bandit, that’s just not possible (unless we pay a lot of $$ to have someone stay with him in our home, and there’s have to be a massive clearing effort).
I can’t believe that you’ll be touring colleges again already! Wow!
I probably would’ve used packaged egg whites for the angel food cake. Glad he enjoyed it! I’ll take that cookie cake . . .

I used to wear contacts for distance then all of the sudden I did not need them anymore. Instead, I now need reading glasses. Kind of weird how it switches. All of the teen and college years just fly by! Enjoy every minute

Nice job on the cake! My biggest undertaking was making sour cream raisin pie. It was a major production with cooking the raisins (in a double boiler), and making the meringue. UGH! Isn’t it crazy how fast the college process goes?

Funny about your vision getting stronger in one eye – this exact thing happen to me! I thought it was bizarre but apparently it happens!!

Can I just say that that cup of coffee looks so pretty? You did a great job with the cake, it looks yummy. That is interesting about your eye. How does one eye get “stronger”?

Glad your Angel Food cake turned out great. It looks delicious. I am not a fan of cakes but my favorite is “Brownie”.
About the coffee yesterday was my 6th day without it because I had a strong stomach pain after drinking a cappuccino at the bar. Maybe because the milk was bad.Today I tried to drink it again and luckily I had no problems.

That’s awesome that your eyesight got stronger! Mine went kaput when I was pretty young and never improved so I ended up getting LASIK a few years ago and it’s a whole new world out there!
