This was the week I started counting down toward Thanksgiving and Thing 1’s return home for the long holiday weekend. Things felt a bit frantic because as per usual, work is off the leash. The workouts got done though, see below:
Monday: Walk 4 miles, Core
Tuesday: Walk 4 miles, Trail Run 4 miles
Wednesday: Walk 4 miles, Balance, Strength, Mobility
Thursday: Walk 4 miles, Trail Run 3 miles, Upper Body Strength
Friday: Walk 4 miles, Trail Run 4 miles
Saturday: Walk 4 miles, 30 min. Treadmill Bootcamp (ouch) + Core
Sunday: Walk 4 miles, Heavy Strength
Early in the week, we enjoyed more gloriously mild daytime weather, but the nights were freezing, making for some very frosty morning walks. On Friday we were treated to gusty snow showers, sleet, and daytime highs in the 30s. Oh well. Tis the season after all.
I’m about 75% through The Conqueror Amalfi Coast Challenge. For the record I’m not counting my walking miles toward the challenge. If I did I’d have finished in little more than one week. This week’s highlight was passing through Positano. If only it were real. I’d love to be in Italy about now.
My cookbook culling project continues. I made these Super Hero 2.0 Muffins from Shalane’s newest Rise & Run cookbook I told you about last week. They’re gluten-free and contain A LOT of ingredients (zucchini, sweet potato, oat flour, almond flour and more), but they are super healthy and delicious in an unsweet way.
I also started to plan Thanksgiving dinner. I always want to try some new recipes but I rarely do because I know my family expects certain things to be prepared in certain ways. That said, our gathering will be a little smaller this year: Just 11 of us instead of the usual 16.

My go-to, of recent, is the bike (now it’s the indoor bike by default of the weather). My legs always appreciate the motion, and before long I find myself upping the resistance:-) I’ll be hosting (I have the most room & the biggest table), but I haven’t done much pre-planning yet.

My sister is hosting this year–starting next year, we are going to alternate with Christmas. I have to work Weds and Friday next week, so there’s no way I could host. The hubs said he’d ‘do everything’ to which I snorted. LOL

My brother’s hosting Thanksgiving (I’ve got Christmas) – so I’m just on the hook for my apple sausage stuffing and dessert.
Those muffins look so good! I just received my copy of Shalane’s book and will be trying a couple of recipes this week.

I have zero idea what’s going down on Thursday. If we end up staying here, or even if we travel but come back for our meal, it’s gonna be majorly simple.
Yes, even on the nice days the mornings are still chilly but still no snow here, knock on wood.

Those muffins sound delicious, but I would never make them because I don’t keep those special flours in my pantry and I’d be the only one who would eat them.
We are paring Thanksgiving down to the basics this year because my DIL (!) is having surgery this week, so we will be traveling to their place, but bringing everything but the bird to keep her from cooking.

Those muffins look so good! The original superhero muffins are my favorite but I hate grating carrots and zucchini. We are just going to my parents’ for Thanksgiving. I’m glad I dont need to make a turkey like last year!

Good luck with Thanksgiving! I just ordered the Rise & Run cookbook and will try the muffins, I’ve seen others say they are good. I also just finally got an insta pot, and probably need to research some recipes for it! I made a wild rice chicken mushroom soup today. I couldn’t believe how fast it was!

I can’t imagine the stress of having two big family dinners in a month, effectively – argh! We have the option to do different things for Christmas as we haven’t seen my husband’s family for a few years on the day (transport issues and sister-in-law’s father has been living with Alzheimer’s so us not being there takes a little pressure off) but Mr Liz loves his Christmas dinner so we have it the same as always anyway! And again on New Year’s Eve!

We always have a very small Thanksgiving at our house (my 4, and my parents). But, we have a big turkey in the freezer because my husband loves turkey! Me, I’m team “ham” 😉 I also try to think of a new recipe to try and also don’t end up making it most years. I have to get thinking about it!!

I am the same about Thanksgiving. I want to make so many new recipes, but it’s also the only time of year that we make certain things, so I just tend back to those.
