Well October, it’s been fun…kind of. You were gloomier than most Octobers and rainy too. Here’s how the week in workouts went:
Monday: No walk due to torrential rain, otherwise rest
Tuesday: Walk 4 miles, Strength Interval Workout
Wednesday: Walk 4 miles, Trail Run 4 miles
Thursday: Walk 4 miles, otherwise rest
Friday: No walk, so much rain, Bike Tabata intervals + full-body strength
Saturday: Walk 4 miles, Train Run 4 miles
Sunday: Walk 4 miles, Heavy Strength
The week started with torrential rain and gale force wind. Getting outside to walk was not in the cards. By Thursday and Friday we had a repeat of that same windy, rainy weather. Ugh. In Mom Nature’s defense, at least it was mild. 50’s here at the end of October is a cause for celebration. We finally got our pop of color too. Better late than never. My runs this week felt a little weak and winded, no thanks to last week’s chest cold. Garmin was not impressed. With no races on the horizon, it is what it is.
In Other News…
We enjoyed yet another of Thing 2’s in=person concerts. This time it was ensembles and chamber music. I don’t want to jinx it, but I think she’s rekindling her desire to perform. Shhhhh.
I made the croutons out of a gluten-free pumpkin bagel.
I’m still on a mission to cull my cookbook collection and this week’s featured recipe is another soup. This Roasted Winter Vegetable Soup from the Barefoot Contessa is another winner. I has wonderful flavor thanks to carrots, parsnips, sweet potato and butternut squash, To be honest the roasted vegetables on their own with their crispy, carmelized edges, were so delicious, no soup is needed. I need to make them more often.
The Conqueror Challenge
Recently I was invited to join a Conqueror Challenge so I chose the 35-mile virtual trek along the Amalfi Coast. Who doesn’t love the Amalfi Coast? There’s a great app where I log my runs and it charts my course as I cover the miles, sending me postcards along the way. It’s a fun way to learn about points of interest in various parts of the world. Remember when I did the Hadrian’s Wall 90-mile challenge? We’re boycotting the Halloween festivities tonight in exchange for a birthday dinner with the youngest (her bday is tomorrow). October was less than enjoyable, at least in terms of weather. Granted, for most of the month, the temps were bearable, but the wind and rain were off the charts. That soup sounds great!

I don’t think we will get any trick or treaters but I ran out in a panic yesterday and got a small amount of candy. I just don’t want it here in front of me. I do miss all the Halloween fun we used to have w the kiddos. we had a few rainy days too but thankfully my run days were nice and sunny. I am soaking in the fall trees. Can’t wait to see you next weekend

You won’t believe how many cookbooks I trashed after the kitchen renovation. I saved some. But use mostly digital ones now.

That soup sounds delicious, and that Conqueror Challenge sounds really cool! I hope we get trick-or-treaters tonight. Otherwise I’ll have to go into the office this week to get rid of the candy we bought. 😉

YUM! That soup sounds amazing.
We also got to go to an in-person concert for the first time since Covid. Funny that our daughters both play the flute! Mine’s only in seventh grade though- their band program really took a hit during the pandemic and virtual schooling, but I was so happy to see them onstage playing a real concert, I didn’t care what it sounded like, ha ha.
Yes! Trick or treaters tonight! We get lots of them, and I have the candy ready.

We made some little baggies of candy that we will put out on a table outside, and we’re gonna try to take Grayson trick or treating for a little bit. We finally started to see fall colors this week. Its still unseasonably warm here most days!

I love backed butternut squash fries! I don’t think I’ve actually tried them in the air fryer yet.
Just keep moving. That’s my motto!
Thankfully we didn’t have quite so much rain. But not much sunshine, either.

We had really bad winds and rain earlier in the week but luckily it didn’t result in flooding or two many power outages. It did however help a bunch of leaves fall off the trees which made the sidewalks a little bit slippery unfortunately.
That soup looks delicious! Also that was genius to use a bagel to make the croutons – I never thought to do that but will definitely try it out.

That soup sounds delicious! I’m all about the soups right now, particularly to bring to work now that I’m back in the office a few days a week. I just made a curry apple squash soup today!
we’ll be handing out candy tonight and trying to keep the dogs from barking like crazy every time the doorbell rings!

The Amalfi Coast is a bucket list destination for me! I have been searching through all of my soup recipes with the change in season. I do love soup weather!! We passed out candy and it was odd because it’s the first year neither of my kids were home. A bit sad!
