Roasted Honey Chipotle BBQ Sweet Potatoes

I’ve been grilling a ton of veggies lately. Winter squash and sweet potatoes are so very good when they’re roasted. Since it’ll be just the four of us here for Thanksgiving dinner this year, I decided to break from some of our traditional dishes and experiment with new, healthier versions of old favorites. That’s how these Roasted Honey Chipotle BBQ Sweet Potatoes were born.
Coat sweet potato chunks with seasonings and roast in a 400º F oven
They’re super easy to make. After cutting the sweet potatoes into chunks, simply coat them in oil and spices before roasting. Here’s the step-by-step recipe.
Roasted Honey Chipotle BBQ Sweet Potatoes | | Print |
- 2 lbs. Sweet Potatoes, peeled and chopped into chunks
- Coconut Oil or oil of your choice
- 1-1/2-2T Enspice Chipotle BBQ seasoning
- 1-2t Enspice Seasoned Salt
- Enspice Black Pepper to taste
- 2-3T Honey
- Spray a large, foil-lined baking sheet with coconut-oil cooking spray.
- Place sweet potato chunks in a large mixing bowl.
- Toss them with coconut oil, then add in spices.
- Toss until evenly coated.
- Pour them onto the baking sheet so they're spaced apart.
- Drizzle honey over them.
- Bake at 400F for 30ish minutes.
- Remove them from the over halfway through the roasting process to shake them around so they cook on all sides.
- Remove from the oven, place in a serving dish and enjoy.
- Serves 6

Enspice sounds like a great company! I’ve always cooked a lot. I think it’s sad more people don’t cook for themselves. Although in general I think I’ve been cooking a little bit less, actually. Mr. Judy being home means he can fix his own breakfast & dinner (we do a bigger meal at lunch most days now).
