It’s been a hot summer and our grill has been working overtime. I’ve especially enjoyed learning to grill fish and have experimented quite a bit on that front. This Citrus Cod recipe is a total winner, not to mention quick and easy to prepare.
I mentioned my trepidation before about finding truly fresh fish here in the Midwest, and how discovering Sitka Salmon Shares changed all of that. The fish is wild-caught, by a collective of small-boat, family fisherman in Alaska and the Pacific Northwest, then blast frozen at the peak of freshness before it’s shipped immediately to my doorstep. The freshness makes all the difference because the flavor is incredible.

I’ve learned so much about the kinds of fish that are in season when. Turns out cod and halibut season are just about wrapped up and all eyes are on salmon, sashimi-grade albacore and more.
So let’s get back to my recipe. Check out my video for the play-by-play:
I highly recommend a grill basket for fish. Makes grilling fragile things and veggies SO much easier.
