Just in time for summer I’ve got a recipe that’s refreshing and sure to help you recover after a sweaty run or workout.
Who Doesn’t love a good popsicle when the mercury soars? These aren’t just any popsicle though. I loaded them up with stuff athletes need, especially when it’s hot. I started with Effer-Hydrate Tablets from Now Foods. They’re a blend of B vitamins and minerals (sodium, potassium, magnesium, calcium) the body needs to stay hydrated.ย
Typically I dissolve a tablet in water for on-the-run hydration, however for these popsicles I dissolved them in coconut water, because it’s loaded with potassium. Potassium regulates fluid balance and controls muscle contraction. Ever had those crazy leg cramps, either while running or at night? That’s likely due to an electrolyte imbalance resulting from low potassium.
I poured the solution into popsicle molds, then added fruit: Blueberries for antioxidants, lemon for some zing and YUM! I froze them for a few hours and voila!

- 2C Coconut Water
- 1 Electrolyte Tablet, any flavor
- Fruit of a your choice, chopped small enough to fit inside popsicle molds
- Dissolve electrolyte tablet in the coconut water.
- Pour into popsicle molds.
- Add fruit.
- Freeze several hours or overnight.
