I came clean to you before about how, until recently, I shied away from cooking fish at home. It seemed like any fish I could get at the grocery store here in the Midwest wasn’t the freshest. You can’t argue with the health benefits of wild-caught Alaskan Salmon. I’ve learned that when you have a really fresh, high-quality piece of fish, you don’t need a fancy recipe or a heavy sauce to make it taste great. The natural, delicate flavor is delicious on its own. Cooking salmon is actually very simple, as you’ll see in my video below.
I paired the salmon with Superfood Slaw, one of my favorite sides. Since doing the AutoImmune Protocol at the beginning of the year, I’ve stayed gluten- and soy-free and I make sure to take in plenty of fresh veggies. This slaw is packed with nutrients and antioxidants. It’s the perfect combination of crunchy, tangy and sweet.
Roasted Salmon with Lemon-Garlic Butter and Superfood Slaw
Roasted Salmon with Lemon-Garlic Butter and Superfood Slaw | | Print |
- 1 lb. fillet Wild Alaskan Salmon
- Salt
- Black Pepper
- Olive Oil
- Lemon Garlic Butter
- 2 cloves fresh garlic, chopped
- 2T Butter
- 2T Olive Oil
- Juice of half a lemon
- Superfood Slaw
- 4-5 C Broccoslaw
- 1C Shredded Carrots
- 1C Shredded Purple Cabbage
- 1 Apple, peeled and cut into matchstick size pieces
- 1" Fresh Ginger, minced
- 1 Handful Fresh Cilantro, chopped
- 4 Scallions, diced
- ¼ C (approx) Apple Cider Vinegar
- 2-3T Extra Virgon Olive Oil
- Salt and pepper to taste
- Preheat oven to 350
- Place salmon, skin-side down on parchment-lined baking sheet.
- Brush with olive oil.
- Sprinkle with salt and pepper.
- Roast approx 13 minutes, until fish is opaque.
- Superfood Slaw
- Combine all ingredients in a large bowl.
- Toss with apple cider vinegar and olive oil.
- Add salt and pepper to taste.
- Enjoy!

Luckily Mr. Judy actually likes fish, otherwise there’d be a lot more strain over food than there already is. He’s not real fond of salmon, though I love it!
We seared tuna last night. We eat fish at least a couple of times a week (I usually eat it more).

I love salmon. I always spend a little more for the wild salmon rather than the farm-raised. It just looks so much better – vibrant red rather than washed-out pink. Thanks for sharing the recipe. I am always on the lookout these days for something new to make. Cooking 7 days/week is getting old! 🙂
