With holiday parties, pot lucks and other obligations seeming to come from all directions lately, who’s got time to sit down to a home-cooked meal let alone actually make one? The struggle is real. Earlier this year I was had my first (very pleasant) experience with Peapod grocery delivery service, and recently my friends at Peapod invited me to make something from the Skinnytaste Air Fryer Cookbook.
Peapod Meal Kits
Houston we have a problem…or so I thought…because I don’t have an air fryer. After further research though, I learned an air fryer was not, in fact, mandatory to use the cookbook. Alrighty then, game on!
I learned that Peapod offered Meal Kits back in June when I made Fast Pho from Mark Bittman’s Dinner for Everyone cookbook. For a limited time, Peapod also has a meal kit for Skinnytaste’s Cornflake-Crusted “Fried” Chicken with Romaine Slaw, available in their New York City, Chicago, Indianapolis and Milwaukee markets.
Okay so Fried is usually an “F” word here. Other than some light sauteing here and there, I don’t fry anything. A family history of heart disease scared me far away from the deep fryer years ago. This is precisely why the prospect of crispy, coated chicken that was HEALTHY appealed to me. If there is a healthy version of fried chicken, I am up for it! My kids may have been even more excited than I.
I placed my order online and scheduled delivery. My usual guy (who is awesome) arrived right on schedule and delivered my order right to my kitchen counter.
Everything I needed came in the familiar meal kit bag.
It contained every single ingredient (down to the salt) I’d need for the recipe, along with a fully illustrated, step-by-step recipe card. Everything was so perfectly and clearly labeled, there was no question as to what was what.

I totally appreciate the simple, high-quality ingredients, even in the slaw dressing.
I got the chicken seasoned, coated and ready to bake, which was actually very quick and simple because everything in the meal kit is pre-washed, chopped and measured for you.
While the chicken baked, I put the slaw together. Super simple, yet fresh and delicious.
It’s a meal that was super quick and easy to make and most important, the entire family enjoyed it.

Meal prep kits have come a long way! I love the look of all of the fresh, natural ingredients there. I bet it was a hit at the dinner table

I have yet to try Peapod though I have thought of it many times. Our schedule is crazy, even with most of the kids gone. The meal prep kit sounds like a fantastic idea!
