St. Patty’s Day is kind of a big deal here in the Chicago area. Everybody’s Irish, the river gets dyed green and there’s a parade like no other, usually with crappy, blustery cold weather, but still. When we were kids we HAD to go to a certain place for a Shamrock Shake. Sometimes it was minty, sometimes it was more vanilla-tasting but it was ALWAYS fun.
Fast forward to now. I love the idea of a Shamrock Shake but nowadays I want my food to work for me. So I came up with a healthified version. One that’s a beautiful green, courtesy of fresh spinach, but also packs a protein punch, thanks to vanilla protein powder.
A Shamrock Shake even my 13-yr. old “vegetarian” that eats no veggies to speak of, loves.
Shamrock Protein Shake
Shamrock Protein Shake | Print |
- 1C Milk (I used almond)
- 1 Scoop Vanilla Protein Powder
- 1 Big Handful Fresh Spinach
- ½ Frozen Banana Chunks
- ¼ Avocado
- ⅛t Mint Extract
- ¼t Vanilla Extract
- 1 pkt Vanilla Stevia
- Handful of ice cubes
- Combine all ingredients in a blender. Whip up until smooth.
- Pour in a glass and enjoy!
