Our Tuesdays on the Run Linkup this week is all about Halloween. What’s your favorite Halloween treat? Will you dress up? Race in costume? Inquiring minds wanna know!
I will celebrate by chauffering Thing 2 to her friends’ neighborhood for a spirited evening of Trick or Treat. Then I’ll man (woman?) the door here at home base and distribute candy. The weather is looking like it’ll be decent. While I’ve run a few Halloween-themed races in the past, I’ve got none on tap this year.
I’ll also bake up a batch of my Pumpkin Spice Protein Muffins, mostly as a healthy treat for myself that’ll help keep me satisfied so my paws won’t be in the candy bowl all night. The kids and Caveman dig em too and they make the house smell festive and amazing while they bake so a win on all fronts.
Pumpkin Spice Protein Muffins
What makes these muffins so satisfying? Well I added in both Collagen Hydrolysate and Now Foods vanilla protein powder. You won’t taste either one but you’ll definitely get a good punch of protein. They’re so deliciously moist, you’ll love them with a nice hot cup of coffee or tea.
Here’s how you make them:
Pumpkin Spice Protein Muffins | Print |
- 1-1/2C White Whole Wheat Flour
- 1C Pumpkin Puree
- ¼C Great Lakes Collagen Hydrolysate
- ½C Now Foods Vanilla Protein Powder of your choice
- 2 Eggs
- 1t Baking Soda
- 3t Pumpkin Spice Blend
- 1t Salt
- 1t Vanilla
- 2T Now Foods Triple Omega Seed Mix, divided
- 1t Cinnamon
- ½C Honey or Maple Syrup
- ¼C Milk of your choice
- 1 Avocado
- ½C Mix-ins (optional, I used chopped pecans but chocolate chips, raisins, etc are also great)
- Preheat oven to 375F.
- In a large mixing bowl combine flour, Collagen Hydrolysate, protein powder, pumpkin spice blend, salt, baking soda and 1T of the Triple Omega Seed Mix.
- Add in pumpkin puree, honey/maple syrup, milk and avocado. Add eggs one at a time.Mix until combined but don't overmix.
- Fold in any mix-ins.
- Line muffin tins with 16 paper muffin cups and spoon batter into each.
- Top each muffin with cinnamon and remaining tablespoon of Triple Omega Seed Mix.
- Bake for 25 minutes or until toothpick comes out clean. Remove from oven, cool and enjoy!

Great idea to make muffins! We will give out candy for a bit after work. Our neighborhood has mostly really young kids so luckily the trick or treating doesn’t last for too long.

These muffins look delish! Slacker that I am, I haven’t even bought any candy yet. Guess I’ll stop at Target on the way home. We don’t get a lot of trick or treaters at our end of the hood. But you never know.

Yum! Those look delicious. We donβt have big plans for Halloween this year. Just taking the kids trick or treating. Canβt wait to collect my tax. Haha!

There isn’t really anything Halloween running related for me- we’ll join with some neighbors for a little party and trick or treat together. I love the sound of those pumpkin muffins! I made similar ones this week with almond meal and they were so good!

This fall has been super busy. I love to bake all things apple but haven’t had the time.
I am away for work on Halloween. Hope to at least get in a run in halloween themed clothing.

I’m slacking on the Halloween plans this year…no decorations up (except my new skeleton sitting in lotus position) or candy bought. π

I’ve done Halloween races in the past, and not this year. There were plenty of 5k’s and while I initially thought I might do one, I decided not to. I’m enjoying resting up and running when i want to.

Well darn! I even have the avocado, but I have plans for it for dinner. I have some pumpkin I need to use up & am trying to figure out how.
No races. Weather not looking great here, either. We stopped giving out candy shortly after we moved here. Thankfully no one papers our house. π

Muffins look yummy!
We will tag along with our grandsons for Trick or Treat. I usually just put a bowl filled with candy on our front porch for the Trick or Treaters to help themselves. It usually works out well!
