We’ve been grilling like fiends this summer. That’s the way I like it. Summer is so fleeting here in the Chicago area, the more we’re outside, running, biking, playing, gardening, GRILLING, the more I feel like we’re embracing the warm weather while it lasts.
GRILLED CHICKEN QUESADILLAS
One of my favorite things to make on the grill is something the entire family will enjoy. With two finicky teenagers in the house, that’s not as easy as it sounds. Chicken is an all-around favorite though so when I was invited to try O Organics® Air-Chilled Chicken and Open Nature® Air Chilled Chicken, I figured I’d fire up the grill and make some Grilled Chicken Quesadillas.
O Organics® and Open Nature® Air Chilled Chicken is available in the Chicagoland area exclusively at Jewel-Osco. I headed over and found it in the refrigerated section. If Jewel-Osco is not in your area, you can also find it at some of the Albertson’s Companies’ stores including ACME, Shaw’s, Star Market, Tom Thumb and Randalls.
What’s so special about Air-Chilled Chicken?
Each chicken is individually processed in cold chambers with purified air. This results in more intense, naturally delicious chicken flavor. Chickens are fed a proprietary flaxseed diet that boosts Omega-3’s by as much as 350% and lowers the cholesterol level of the meat by as much as 40% when compared to conventional chicken.
Both O Organics and Open Nature Chicken:
- Is raised cage free and is certified by the American Humane Association
- Is naturally moist, even the skinless pieces
- Has up to 40% less dietary cholesterol
O Organics Chicken is similar to the Open Nature variety except it is raised on a 100% organic diet of flaxseed-enriched feed.
I kind of thought chicken was chicken. I look for varieties that are raised without hormones or antibiotics, but I had no clue about the air-chilling process. I was amazed how delicious this chicken was. There really is something to this cold-air processing. I am not exaggerating when I tell you this chicken was incredibly flavorful, tender and delicious. It stayed juicy and moist even after grilling. So much so, that I went back to Jewel-Osco and bought more to use in different dishes. I topped salads with it, added it to fettuccine, and it was still so very delicious. So let’s get back to the recipe.
Grilled Chicken Quesadillas with O Organics
I already told you about the finicky teenager problem. One thing we all love on the grill are chicken quesadillas. They’re super quick and easy not to mention tasty. Best of all they can be customized according to individual tastes.
Some of us love all sorts of veggies, along with chicken and cheese while others, who shall remain nameless, might forego the veggies….maybe.
I grill the marinated chicken and the veggies at the same time. Still loving our grill basket sooo much!
Remove everything from the grill and allow the chicken to rest a few minutes before shredding it with two forks.
Spray the “grill side” of each tortilla with a little olive oil cooking spray before putting on grill. Then add cheese, shredded chicken and veggies before covering with another tortilla (top side sprayed with oil). Carefully press with a spatula to help “seal” the edges.
Cook a few minutes on each side until quesadillas are golden brown and cheese is melted.
Cut into quarters or eighths and enjoy with guac, pico, whatever you like!

Grilled Chicken Quesadillas | | Print |
- 1 to 1-1/2 lb. O Organics or Open Nature Chicken Breasts
- 2-3C Coarsely Chopped Onions, Peppers, Mushrooms
- 8 oz. pkg. Shredded Mexican Cheese Blend
- Chopped Cilantro (optional)
- 8 Flour Tortillas
- Guacamole, Pico de Gallo, Sour Cream (optional)
- Marinade:
- 2T Chili Powder
- 2T Dry White Wine
- 2T Apple Cider Vinegar
- 2T Olive Oil
- Juice of half a lime
- 3 Cloves Garlic, Minced
- ½t Salt
- ½t Pepper
- Combine all marinade ingredients and add to chicken in a covered bowl or zipper bag. Refrigerate at least 1 hour or up to overnight.
- Grill chicken on a medium grill, approx. 4 minutes per side. Be careful not to overcook.
- Remove and let rest 5 minutes.
- Use two forks to shred coarsely.
- Put chopped veggies in a grill basket and cook until tender, approximately 10 minutes
- Lightly spray one side of tortilla with cooking spay and put that side on the grill. Add shredded cheese, chicken pieces, veggies as desired.
- Top with another tortilla (spray top with cooking spray)
- Press top/edges down with spatula to seal.
- Grill approx 4-5 minutes per side, until cheese is melted and tortilla has nicely browned grill marks.
- Flip carefully, allowing other side to cook.
- Remove from grill and cut into quarters or eighths.

This looks yummy. Funny that I don’t make a point to buy organic chicken, but when I do, it’s for my dog …lol ( cus she has health issues). She clearly eats better than we do!

We grill steak most of the time. Because it’s about the only time Mr. Judy gets red meat (plus all the furkids love it too).
We do shrimp sometimes — not chicken too much. I did make some chicken the other day that Mr. Judy liked — just baked, topped with some pesto, tomato sauce, and mozzarella. Easy peasy.

Oh Holy Yum. No Jewel-Osco in my area, but your recipe sounds like heaven. We grill a lot in the summer, but haven’t done much with chicken this summer, this would be a great way to break out of our rut 😉
