The first, glorious week of June is wrap! Before I get to my Grilled Lemon-Herb Shrimp recipe, here’s how my workouts went.
Monday: Rest
Tuesday: Early Track workout 4 miles
Wednesday: 4 miles with coaching athletes +GRD fun
Thursday: 4 overslept trail miles + Strength +Swim
Friday: Rest
Saturday: 6 miles in the rain (rainy miles count for double, right?)
Sunday: CrossFit (killer)
The week, for the most part, was a wet one, especially this weekend. While I’ve run plenty of rainy (and worse) races, I don’t often train in the rain but this week was different. After hemming and hawing, I got out and managed 6 miles. In a perfect world, I’d have run farther but it is what it is: Another week, another missing long run. Many of you expressed concern about my lack of long-run miles last week, but don’t cry for me Argentina, RnRCHI is a hot race I run it FOR FUN. There’s even the option of a 10k so if I don’t get my booty in gear there’s always the 10k.
Other shenanigans this week
- Saw Oceans 8. I enjoyed it. It was good but not fantastic
- Love, love, LOVED seeing Justify take the Triple Crown.
There’s nothing quite like an open road!
Thumbs up for road construction. Who says that? I do! You’ve heard me whine about the busy road I need to pull out onto to get out of our neighborhood. During rush hours, making a left is treacherous at best and sometimes downright impossible. For the next 4 weeks, the road will be open only to local traffic, which means it’s wide open all day everyday for miles. Right now, the actual construction is taking place 2 miles from where we live so we don’t even hear/see it. Of course they’ll get down to our end, but for now, running, biking and pulling out are a breeeeeze!
A marinade that’s a keeper. For the past few years I’ve been intermingling herbs and flowers in my deck planters. Instead of trekking 3 blocks to our community garden, I can snip them whenever I want. So convenient.
Can you spot the oregano?
This past week I threw together a quick marinade that was so good I’ll definitely be making it again.
I simply snipped some basil, lemon thyme, and Greek oregano, threw it in my mortar and pestle, that I was so happy to actually make something other than guac in, drizzled in some avocado oil (olive oil works too) and a little squeeze of lemon. Salt and pepper to taste and voila!
It was so good on shrimp but I’ll bet it’d be equally good on fish or even grilled veggies.
Here’s how I made it. Note: The measurements shown are for FRESH HERBS. If you’re using dried herbs, use a teaspoon for every tablespoon.
Grilled Lemon-Herb Shrimp
Grilled Lemon-Herb Shrimp | Print |
- 1 lb Raw Shrimp, peeled and deveined
- 1 Clove Garlic
- 2T Fresh Basil
- 2T Fresh Greek Oregano
- 2T Fresh Thyme (I used lemon thyme)
- Juice of half a lemon
- 4T Now Foods Avocado oil (olive oil works too)
- 1t Sea Salt
- Ground black pepper to taste
- Put garlic, salt and 2T of the oil in a mortar & pestle or food processor. Grind until smooth. Add in herbs and remaining oil. Continue grinding until smooth.
- Pour mixture over shrimp. Cover and let marinate in the fridge for 1-2 hours.
- Thread shrimp on skewers or cook in a grill basket over medium heat, 2 minutes per side or until shrimp looks pink and no longer translucent.

Finally…
Hearing of the suicide of Kate Spade this week was heartbreaking. When Thing 2 told me I assumed it was a mistake. Just when you think it can’t get worse, we heard the news of Anthony Bourdain. I find my rational mind wanting, trying to make sense of it but failing. Why would someone with seemingly everything to live for (family, fabulous career, enviable lifestyle) commit suicide? Alas suicide is not rational. Depression and mental illness cut across all walks of life. All the trappings of success, as it is defined in our culture, are no balm for a tormented soul. My thoughts are with the families.

I did 6 miles this weekend too. I feel like I need to build back up to long runs slowly with the heat. I’m so over all the rain!

Yesterday’s 8 miler was my first long run in a while. I have lost all my motivation. I’m pretty sure the sun took it with him when he left town. Sigh.
We grill shrimp quite often. I scored some beautiful Key West pinks at Whole Foods a couple weeks ago–now we’re spoiled.

After after hearing about those two this week I felt so sad for their families as well. It does seem so odd for people like that to do that when you think everything is going well for them.

I’m in the same boat when it comes to long runs. i ran the Cleveland Half a few weeks ago and my longest run since then has been 6 miles. I’m just not feeling the long run lately, but like you said, there’s an option to drop down to the 10K which is fine by me too!
The shrimp recipe looks super yummy!

I’ve given up at my attempts at the long runs. We’ll see how that translates at Grandma’s. Thank goodness for the generous course cutoff time. I love growing herbs on my deck. It’s so nice to just step outside of the kitchen and pick what I need. I usually grow parsley, oregano, a few varieties of basil, rosemary, and thyme. So sad about the recent suicides, especially with both of them leaving behind young children.

I’m always looking for new marinades to try, so I’ll bookmark this post and try it out in a couple weeks. I tried a marinade this weekend, and while it was good and simple, it was missing something.

That marinade sounds wonderful! I love blending fresh herbs! This was a recovery week for me, but I did get back up to six miles this weekend. It was a little rough but still, I was running, so all is good.

Yes rainy miles should count as double! It hardly ever rains here, so when it does running in it is almost a treat…almost.
So sad about the recent suicides. You truly never know what is going on inside people. My heart goes out to anyone that feels like that is their only way out. 🙁

I love it when I can cook things right out of the garden. I started growing a few herbs last year and kind of loved it! So many fresh flavors.

I am not good at growing things. Occasionally, I’ll try with some basil or mint, but it doesn’t last – I don’t have the patience or talent for it. Fresh herbs do make things so much better.
Mr PugRunner is the griller is our house. That being said, I love pretty much everything on the Big Green Egg: fish, shrimp, lobster, burgers, steaks, pizza, corn, other veggies…. there’s pretty much nothing you can’t do on that thing.

Your recipe sounds delish!!! My only herb is chives (at least I think that’s an herb LOL). I need to branch out more (no pun intended). That’s a great idea to mix them in with your flowers!

I feel your pain regarding the busy neighborhood street …we had the same situation where we lived in Meridian. Fortunately there was an exit in the back of the neighborhood although inconvenient as heck. First world probs huh? 😉

It’s suppose to rain in Leadville this weekend. No rain for 2 months and it has to rain on THIS particular day. Glad I didn’t invest too much time training ;).

I thought I could do a long run the day after my 5K but I changed my mind. :-O I think it’s funny that even if you didn’t make guac you did use avocado oil — sounds yummy though.

RnRCHI *is* hot. even if you had double digit miles it won’t take away that FACT. I’ve been marinating lately too!! I have two marinades that I’m loving right now, but sadly I live in a flat and we have no herbs on our balcony this year. Last week was a week full of alternative training for a week that was supposed to be “go with the flow”. I killed my quads and glutes in bodypump!
I also was reeling a bit from the deaths of Kate Spade and Anthony Bourdain. I have many thoughts on suicide (not for myself, as a subject) since my friend Lucy took that same exit almost 3 years ago. I am still affected by her death, so when someone who seemingly has everything (Lucy had a lot too – friends, family, she was young, just finished university) decides to go that route my mind just boggles. I never used to cry about these things, but since my friend died, I cry every time because I’m again reminded of the loss.

Having fresh herbs right at your fingertips is the best – I never thought to mix my herb plants into my flower pots. Great idea!
Hearing about both Kate Spade and Anthony Bourdain really threw me and made me want to reach out and check in on friends I haven’t heard from in a while. So sad.

I had not heard about Kate Spade. Both deaths are very tragic. We’ve been grilling scallops lately and I bet that marinade would be tasty on those! I don’t like running hot races — peer pressure and FOMO are very real things, apparently. 😉 I admit I’ll do only the bare minimum of training. Can’t wait to see you though! Thanks for linking!

I too struggle with running in the rain. I would much rather resort to a long run on the treadmill then having to drag myself through the mess outside.
