It was one of those weeks. School obligations, kids’ activities, sleepovers, Homecoming festivities, parenting challenges, you name it, it kept me hopping. My workout week was…um…interesting.
Monday: Rest
Tuesday: Run 2 miles
Wednesday: Run 4 miles 10×1 min at 5k pace
Thursday: Run 5 miles
Friday: Strength
Saturday: Run 15 miles
Sunday: Strength
Except for my weekend long run, the entire week was improvised. Oops.ย
I ran three days in a row, something I rarely do. With the teenager’s high school schedule, running early is not an option so I tend to get it done as soon as they get off to school. This week life just kept getting in the way. Anyway, I’m exhausted. When I’m wiped out, I crave comfort food. It’s been a banner year for gourds in the garden so I used one of my faves, acorn squash, to make something deliciously seasonal and satisfying.
This is the ultimate multi-taskers recipe. While the squash is roasting and the quinoa is cooking, just saute some veggies. Put it all together and boom! That simple.
Roasted Winter Squash w/Quinoa Pilaf | Print |
- 1 Acorn Squash
- 1C Now Foods Tri-Color Quinoa, rinsed
- 2C Veggie Broth
- ½ cup each diced onion, diced celery, diced bell pepper
- 2T give or take, Ellyndale garlic-infused coconut oil
- Bring broth to a boil and add quinoa, simmer until liquid is absorbed.
- Preheat oven to 450.
- Cut squash in half and clean out seeds. Rub inside with 1T Coconut Oil. Place open side down on a roasting pan and roast 30 minutes, until squash is fork tender. Remove from oven.
- Melt the remaining tablespoon of coconut oil in a saute pan and add diced veggies. Saute until tender. Add veggies to the quinoa. Fill each half of squash with quinoa mixture. Cut each half again so you have quarters. Serves 4.

That roasted winter squash looks fabulous! It appears as though you are quite the chef. We, too, had Homecoming week festivities this past week…the chaos is real! The hat is definitely YOU! Have you ever been to the Kentucky Derby? If not, looks like you should plan a trip with that hat! We went a few years ago (bucket list item) and had a marvelous time. I absolutely loved all of the hats!

I’m a big fan of stuffed squash and the season is here with all the fresh new squash on the shelves. Also like a blend of quinoa, I get the different colors in bulk from my co-op so I can mix it myself. It’s hard to adjust to a change in routine and I’m sure that waiting until after your kid’s dropoff instead of being able to just get up and exercise is a big change. I too like to exercise first thing!

I have two acorn squash sitting on my counter. I made a stuffed acorn squash last week that my husband and I loved but my kids didn’t really like. I’ll try this recipe and hopefully they’ll like it better. It looks much less intimidating than the ones I made! Lol
