My friends over at Eggland’s Best (my Eggland’s Besties) are asking cooks everywhere to create an egg dish that uses Eggland’s Best Eggs® along with ingredients that are native to the state where they currently live for a chance to win 10k!
What are our specialties here?
The main crops here in Illinois are corn, soybeans and wheat.
When I think of Chi-town, deep dish pizza instantly comes to mind. So do Chicago-style hot dogs, Polish Sausage, and Italian Beef Sandwiches. Face it, all delicious, but not the healthiest fare.
Since this is a healthy-lifestyle blog and all, I brainstormed further. The Chicago Marathon (my first) is a great one that features the sights, sounds, and aromas of 19 wonderful neighborhoods. One of my faves is at mile 19: Pilsen. It’s the heart of Chicago’s vibrant Hispanic community and also where my energy typically flags. I get hungry. Seriously hungry. I mean, come on 19 miles. The spectators of Mile 19 though give you a total energy boost. There’s lively mariachi music, colorful dancers, and oh the aroma of the many Mexican restaurants. It’s where I start daydreaming about pulling over for some delicious…..no wait, I mean I dream of the finish line and the amazing food that’s going to be part of my finish line celebration.
To honor one of my favorite parts of the Chicago Marathon course, and hello since Cinco de Mayo is just around the corner, I brought all of my favorite Mexican flavors together in a healthy “power bowl” I named after the wonderful community of Pilsen.
I’ve been making an effort to eat more earlier in the day and less later and also focusing on more savory breakfasts. This power bowl fills the bill on both counts.
Start by making the cumin-seasoned quinoa (super simple to make ahead so you can assemble this dish quickly). Layer corn and black beans over the quinoa then cook up some EB eggs your favorite way: I scrambled mine up with red bell pepper and onion). Top it all with tomatoes, avocado, cilantro and a squeeze of fresh lime juice and you’ve got a healthy fiesta in a bowl!

- ½C Quinoa, rinsed, drained and cooked according to pkg. directions.
- 2-3 Eggland's Best Eggs
- ¼C Chopped Red Onion
- ¼C Chopped Red Bell Pepper
- 1T Olive or Grapeseed Oil
- ½t Ground Cumin
- Dash Garlic Powder
- 1T Fresh Lime Juice
- ½C Sweetcorn Kernels
- ½C Black Beans
- ½C Tomatoes, chopped
- ½ Avocado
- Salt & Pepper to taste
- ¼C Cilantro
- Add cumin to cooked quinoa and season with garlic powder and lime juice.
- Divide quinoa among individual bowls.
- Top quinoa with corn, black beans and tomatoes.
- Heat oil In a skillet and saute onion and red pepper.
- Add in eggs and scramble together. Divide among the bowls.
- Top each bowl with avocado chunks and cilantro.
Know what? This mixture is equally delish tucked inside a warm tortilla.

Yum! It’s so easy to get sucked into the Chicago comfort foods, but having healthy options at home to even it out is always a great idea ha.

I love eggs. I make a fried rice with eggs at least once a week Quinoa would be a great substitution great recipe!

Yum! I never eat quinoa because I feel like it’s so plain but I think I would like this. I also love eggs so perhaps this combo is exactly what I need.
Oh, wow. I love all those ingredients! I have EB eggs for breakfast almost every day – simply fried with toast, although I will add veggies or avocado if I have some.

This is almost too pretty to eat, almost! I tried to introduce my family to quinoa and it didn’t go over well but I think if I did this they might give it another try! Shhhh just don’t tell them it’s healthy!
