We’re a few weeks into high school track season here. While my 14-yr old freshman is focused on training with a grueling schedule, including workouts 6x/week and two workouts some days, I’ve had to up my game as the CEO of mom’s taxi, laundry service and food prep. Kind of a one-mom pit crew, if you will.
Dropping her off for 5:45 am practice has gone better than expected. So far she’s been a trooper about getting up and out so early and I’m really proud of the effort she’s putting in. The track coaches gave the team guidelines about hydration, fuel and rest and my teenager understands how important each of these components is to her sports and academic performance.
As a runner and health-conscious individual myself, focusing on whole, nutrient-dense foods is nothing new, but it isn’t always easy to get kids to eat this way. The challenge with this intense track schedule is finding tasty, nutritious, food that travels well so Maddie can take it with her to school for pre- and post-workout fuel.
Taking a page from my own training favorites, I immediately turned to eggs. They’ve been my go-to workout fuel as long as I can remember. Simple hard-boiled eggs are one of my staples on marathon mornings. Portable, delicious and packed with nutrients.
My egg of choice?
Egglands Best. They had me at Omega-3. I’m a total Omega-3 fan girl. I feel better, function better, and run better when I get plenty of it in my diet. Eggland’s Best Eggs® have more than double the Omega 3’s than ordinary eggs. They’re also an excellent source of vitamins B2, B5 and Riboflavin, plus they have four times the Vitamin D, 10 times the Vitamin E and 25 percent less saturated fat, compared to ordinary eggs.
How do they get a better egg?
Green Eggs & Ham Cups | | Print |
- 7 Eggland's Best Eggs (this may vary based on the amount of veggies you use
- 1C Fresh spinach, chopped
- ¼C Onions, finely chopped
- ½C Broccoli florets, finely chopped
- ¾C Ham, diced (I use a thick slice of uncured deli ham)
- Salt, pepper and garlic powder to taste
- Shredded cheese of your choice (optional). I use mild, white cheddar
- Preheat oven to 350 F.
- Saute onions and broccoli over medium heat until soft. Add spinach, ham and continue cooking until spinach is wilted.
- Whisk eggs together with seasonings in a mixing bowl.
- Add veggie/ham mixture to eggs.
- Coat 12 muffin cups with cooking spray.
- Fill each muffin cup with egg/veggie mixture.
- Top with shredded cheese.
- Bake 15-17 minutes or until eggs spring back or toothpick comes out clean.
- Cool on a rack and remove from pan.
- Enjoy warm or room temperature. Egg cups can be rewarmed in the microwave or toaster oven if desired.

We love Eggland eggs and I didn’t know they made those pre made hard boiled eggs. Will have to keep an eye out for those at our Harris Teeter. Congrats to your daughter, 545 is a total achievement!

I love an occasional hard boiled egg too, especially this time of the year ( Easter). Hard Boiled is such a great way to go, because you can make them ahead for the week and they are such a great grab and go snack.

I love hard-boiled eggs, but only on a salad (The yolk is kinda pasty & sticky, not my fav texture unless there’s sugar involved). I love scrambled eggs, though…I need to make them more often. Thanks for the reminder 😉

Anytime I get eggs from the grocery store, I believe I do pick up Eggland now that I think about it. Most the time I pick them up from an egg farm, that is just down the street from me, it’s great except the minimum is about 5 dozen at a time, LOL yeah, so they last forever when I go there:)

I really want to make those egg muffins for my boys. It would be so great to have them ready to heat up in the morning. My youngest son doesn’t like eggs, even tho I try to convince him what a great source of protein they are.

I love making little egg muffins like those. Eggs are one of my staples! We go through about 4 dozen a week!!! I’m not a hardboiled egg kind of gal though, I prefer mine scrambled or an omelet!
