While I’m off taking on the insanity that is the Flying Pig 3-way, I’ll leave you with some recipes I’ve been loving lately. The first is a delicious twist on quinoa. I used red quinoa here but any kind is fine:
1/2C Cooked Quinoa
2C Broccoli, steamed and chopped
2 Slices bacon, cooked and diced (optional)
2 Cloves garlic, chopped
1/2C Onion, chopped
1/2C Shredded parmesan cheese
2 Eggs
Salt and pepper to taste
1/4C Bread crumbs (use almond meal for gluten free)
Combine quinoa, veggies, cheese and seasoning. Beat eggs and add to veggie mixture. Fold in bread crumbs. Form into patties and place in a greased pan. Cook a few minutes per side until brown. Make 4-5 patties.
You probably know Mothers’ Day is just around the corner. My mom is next to impossible on the gift giving front. While I may falter on what to get her, making her a nice meal is a no brainer. I thought a yogurt pie would be a fun Mothers’ Day treat. I’m thrilled with how it came out. It’s light, tangy, and best of all really easy to make.
Crust
2-1/2C shredded, sweetened coconut
1/2C melted coconut oil (melted butter works too)
Combine melted coconut oil with coconut and press into a well greased 9″ pie pan. Bake at 300 degrees F for approx. 10 minutes until lightly browned. Keep an eye on it. Cool.
Pie
2 Containers Greek Yogurt
1C whipped cream
1 Pint Fresh Strawberries
Slice about a cup of the strawberries and layer on top of the pie crust. Fold together yogurt and whipped cream and cover the sliced strawberry layer. Use remaining berries for top of pie and garnish. Chill to set and serve.
If you don’t like coconut or don’t want to mess with baking a crust, feel free to sub in a graham cracker one.

I like to keep Mother’s Day low key. Breakfast out with my boys (it’ll be minus one this year but I’ll try to keep the tears to a minimum) then a visit with my Mum and afternoon tea. It’s not so much about the presents and more about spending time.
