With Thanksgiving coming up and the Grain Brain Challenge going strong, I’ve been seeking out recipes that fit both parameters.
Although I won’t officially be on the Grain Brain Challenge when Thanksgiving rolls around, I do plan to stay gluten and soy free. It sure wouldn’t hurt to serve something gluten-free and festive for Thanksgiving.
I made this red quinoa/winter squash dish yesterday. I love how the flavors layer upon each other. The cranberries and squash give it a little sweetness while the quinoa and pecans add a subtle crunch. Next time I make this I think I’ll throw in an apple as well.
You may have seen my maiden voyage with cauliflower-crust pizza on Instagram last weekend. It actually turned out pretty great. I think the key is using a pizza stone or at least transferring the pie onto a very hot baking sheet. My veggie phobic Caveman even partook, albeit a tad squeamishly. I will definitely be making this one again too. It was freaking delicious!

I swear if I can ever do eggs again there are so many fun pizza crusts that I want to try. I just don’t know that an egg replacer would be as enjoyable!

I can’t get on board with replacing delicious gluteny pizza crust with vegetables if I don’t have to. I’ll put veggies all over that pizza, but I need my floury carbs!

Whoa I made a squash and cranberry bake last week, but I added sliced green apples (as you mentioned), and would HIGHLY recommend it.

I’m not a fan of eliminating gluten unless there’s a medical issue – but I can get behind some of these yummy recipes that I’ve seen. I love the colors of the squash dish and it sounds amazing.

Oh my, that cauliflower crust looks really good, who would have thought! We’re hosting Thanksgiving again this year, going to attempt a deep fried turkey!

I did my first Gluten Free Thanksgiving last year and my first Paleo version this year. I love cauliflower pizza crust but sometimes find it a lot of work so I make a flax based crust now – very easy.

Happy to say I am not hosting Thanksgiving:) I do make Thanksgiving dinner just for my husband and kids a couple days later so we have leftovers;)

Of course in Italy we don’t celebrate the Thanksgiving…. but in this period here we don’t have anything to celebrate… we will celebrate again when our politicians will go home forever!

I’ve missed so much! I didn’t realize you were going GF. I did that this summer (while trying to see if it was the cause of some medical issues) and it was cool to try so many new and different things. Plus, it gave me a good excuse to buy a bunch of new cookbooks ๐
Read the Bully post – that is the weirdest thing ever! I’ve been punked many a time at the Finish. Never knew I was supposed to shove and yell at the faster person ๐ Can only hope that woman felt sheepish later after she had time to chill out and realize what a “punk” she behaved like. So weird.

Mmm mmm! These look so good. Doing a food service hospital rotation these last few weeks, and made Harvest Fall Vegetable and Quinoa Soup. We ran out! Over 100 served! Love quinoa!
