We are back to school today. Yet another summer has slipped away. It’s not all bad though, I have my memories of our Alaskan adventure to cling to.
Many of you have asked how we arranged our trip. Easy really since it was a cruise. After a couple of days touring Seattle, we boarded the Celebrity Solstice and headed up the inside passage.
We hit Ketchikan, Juneau, Skagway and cruised the Tracy Arm Fjord before hitting Vancouver Island then finally back to Seattle. We loved every minute of it (well maybe not when I lost my jacket in Ketchikan, but I’ll survive).
Today I’m talking about food. Believe me there was plenty of it. While I certainly didn’t deprive myself, I was determined not to go hog wild either.
While I rarely cook fish at home (I know, my bad) I ate it every chance I got (a lot) on this trip and I have the fins to prove it. Ok I jest. Still giddy about back-to-school.
Wild Alaskan salmon tastes like a different animal compared to the fish available here in the Midwest.
But the most memorable food item for me was not the salmon, or the slew of fabulous desserts. It was this salad. I love me some kale in protein shakes and I’ll also saute it up with garlic and olive oil. But I’ve never been successful making a truly tasty kale salad. Until now. Thanks to the chef on the Solstice for sharing this one:
Kale Salad
- Dinosaur Kale
- Roasted squash
- Dried cherries
- Candied pecans
- Shaved parmesan
Lemon Viniagrette
- 1T dijon mustard
- 1/4C lemon juice
- 1-1/2t kosher salt
- 3/4t black pepper
- 1/2C olive oil
So delicious! I’ve already recreated it here at home. You need to try it!

I pretty much splurge foodwise all the time, so, yes, I do on vacation, too.

I love kale but don’t eat it very often. I do have one salad recioe that hass the same dressing but different things in the salad. This should be really good!

Carla it was just super fresh. Maybe leaner/less mushy? Not the slightest bit fishy, which is what turns me off. And of course they prepared it in delicious ways.

I would love to take an Alaskan Cruise. Cruise ships get a bad wrap these days but I have a feeling that the Alaskan ones are alright. It’s the ones in the Bahamas that seem to go badly.
I’m not much of a fish eater but the pic sure looks good.

That salad sounds amazing! Do you massage the oil into the leaves? I’ve learned that really softens the raw kale – it’s a small thing that makes a big difference!

Ahhh, the food on cruises is one of my favorite reasons for going on a cruise! I do try to stay somewhat healthy with my eating and try new things while on a cruise, but admittedly I do let loose a little bit. =) That fish looks DELICIOSO!!!

Not sure that I normally “splurge” on good while vacationing (last time we were in Hawaii, we cooked every night rather than go out), but I must say that I had some really nice salmon twice when we were in Seattle for a long weekend
