It’s ‘attack of the killer cucumbers’ in our garden these days. I’ve been looking for a way to use them beyond sandwiches or as crudities. My grandmother used to make a cucumber salad that was so good. Sadly she is gone and so is the recipe.
I found a similar recipe by Ellie Krieger that sounded great because it had so little sugar. I doctored it up to include even more veggies. Oh and I messed with the seasonings a bit too. I’ll bet Stevia would work great in here. My veggiephobe Caveman was wild for this one. I hope you enjoy it:
Cucumber Salad
- 2 big cukes
- 1 small red onion
- 1 stalk celery
- 1/2 red bell pepper
- 1-1/2 t salt
- 2T white vinegar
- 1T sugar
- 2T fresh dill (2t dried)
- Pinch of celery seed (optional)
Slice the veggies as thinly as you can (a mandolin would be great here). Toss with salt and drain in a colander for 20 minutes. Rinse well. Add the vinegar and sugar. Stir in dill and celery seed. Voila!

I don’t have it handy, but I make “gurken salat” every year for an oktoberfest party which seems to be a big hit with everyone and the hosts have asked me to make a double batch this time. You can probably look it up. I do make a substitution though (in the name of health), using plain greek yogurt instead of sour cream.

Yum! My sister threw some cucumbers and assorted veggies in a salad like this earlier this summer. No sugar though, just oil and vinegar. I’ve been in a salty/vinegary mood though so it was just fine with me.

Pretty sure you can’t go wrong with cucumbers and dill! One of our favorites here is cucumbers, tomatoes, feta, olive oil and balsamic.
