Our community garden has had a tough go this summer due to extreme heat and drought. The squash are coming fast and furiously now though.
Those of you who hangout with me on Instagram (@teamarcia) saw that I made this recently:
Roasted Pattypan Squash
This one is new to me. Pattypan is a variety of scallop squash. I sliced it, tossed it in olive oil, salt and pepper and roasted it at 450 degrees for 10 minutes on each side. Simple and delicious!
Zucchini Banana Nut Bread
Zucchini bread is nothing new. I’ve been making regular and chocolate zucchini breads for years. But I’d never combined zucchini and bananas. I modified a recipe I found in the Noteworthy Cookbook. This one has less sugar, no oil and uses whole wheat flour.
- 3 eggs
- 1-1/2C Sugar
- 1C Applesauce
- 2t Vanilla
- 2C Unpeeled, grated zucchini, drained
- 2C White whole wheat flour
- 3t Cinnamon
- 2t Baking soda
- 1/2t Baking powder
- 1t Salt
- 1C Chopped walnuts or pecans
- 3 Very ripe bananas
In a large bowl combine eggs, sugar and vanilla. Beat well. Stir in zucchini. Sift together flour, cinnamon, baking soda, baking powder and salt. Fold in dry ingredients and nuts into egg mixture. Stir in bananas. Pour into 2 greased, lightly floured 9″x5″ loaf pans.
Bake in preheated 350-degree oven 1 hour or until tester comes out clean. If bread is browning too quickly (mine did) reduce heat to 300. Remove loaves from oven and cool on rack for 30 minutes before removing from pan.

Both those recipes sound great. I love a zucchini bread recipe that cuts the sugar!

i tried pattypan squash this summer-we grilled it. it was really good! and, i will definitely be making that bread. headed to the Auburn football game this weekend! enjoy yours too!

We have a very similar zucchini bread recipe, that looks delicious! I love adding applesauce, banana or sweet potato to breads- so much extra moisture and natural flavor. Have a great 3 day weekend!

We are enjoying this weekend by competing in a triathlon. Then we will relax and I will try to enjoy what’s left of my summer since I go back to work on Monday.
