Here’s a super easy and healthy fruit salsa that’s perfect for Memorial Day picnics! MAYhem is still young and I’ve already brought this salsa to two parties. It’s packed with fruits and veggies, my picky mcpickerson kids love it, and best of all, Thing 2 loves to help me prepare it!
Fruit Salsa
Makes 12 servings
3 medium tomatoes
1 pint strawberries, mango or pineapple: or a combo of the 3: whatever you like
1/2 seedless cucumber
1/2 orange bell pepper
1/2 yellow bell pepper
1 can black beans, drained and rinsed
1/2C fresh corn kernels
Juice of one lime
1/2C fresh cilantro
1-1/2T olive oil
1t salt
black pepper to taste
Dice all fruits and veggies, place in a mixing bowl. Add beans, corn and lime juice; mix together.
Remove cilantro leaves from stems, dice and add to the bowl. Mix in olive oil, salt and pepper.
Note: This salsa is tame. As in not spicy. If a spicier, Southwestern flair is what your’re after, just add the following:
3/4t toasted cumin seeds*
1/2c diced red onion
1/4t crushed red pepper flakes, or to taste
Toasting cumin could not be easier. Just throw some in a pan and heat for a few minutes. Keep it moving until it starts to brown.
