I’ve been wanting to make waffles for awhile now and haven’t been able to find my waffle maker. A certain Caveman, who shall remain nameless, most likely tossed mine while I wasn’t looking. I’m not joking. He has a history of doing this. RIP Kitchen Aid food processor. Anywho, I got myself a new waffle iron and set to work. The waffles had to be gluten-free of course, and the more protein the better. Since we’re heading into winter I decided on a festive flavor.
That’s how these Gluten-Free Gingerbread Protein Waffles were born.
I have to say the house smelled amazing when I made them. You’ll notice there’s sweet potato puree in the recipe. It makes the waffles nice and moist and gives them some good nutrients and fiber, but I promise you won’t taste the sweet potato, in case you are not a fan.
I used Grass-Fed Whey Protein from Now Foods. Can’t go wrong with 19 grams of protein and no soy. Now’s Pea Protein works just as well if you prefer plant-based protein.
Here’s how you make them:
Gluten-Free Gingerbread Protein Waffles
Gluten-Free Gingerbread Protein Waffles | | Print |
- 6T Sweet potato puree (pumpkin or winter squash puree would work too)
- 2 Scoops Now Foods Vanilla Protein Powder
- 2 Eggs
- 2T Water
- 2t Cinnamon
- ¼t Allspice
- 1t Ground Ginger
- Pinch or Nutmeg and Ground Clove (optional)
- Combine all ingredients in a mixing bowl
- Mix until combined
- Brush waffle iron with butter or coat with cooking spray
- Let batter rest while waffle iron comes up to temperature
- Cook according to your waffle maker's instructions.
- Serve warm with a dusting of powdered sugar or maple syrup.
An added bonus? The whole family loves them, even our picky 15 yr old. She eats them at room temperature and dips them in syrup. Not my bag maybe but who am I to argue?
