Truth: I’ve maintained a 15-lb weight loss since being on the AutoImmune Protocol Diet for 6 weeks earlier this year, and continuing to stay gluten- and soy-free. Another truth: I love cake, but the regular kind is no longer an option for me.
Sooooo I took some of the ingredients from one of my favorite cakes, added some craving-crushing protein, some coconut flour, and Gluten-Free Carrot Cake Protein Bites were born!
Carrot Cake Protein Bites have all the moist, nutty deliciousness of ordinary carrot cake, with none of the refined flour or sugar. Score and SCORE!
I runfess they contain quite a few ingredients but don’t let that scare you. Trust me they are worth the effort AND there’s no baking involved!
Here’s how you make them:
Carrot Cake Protein Bites

- 1C Grated Carrots
- ¾C Chopped Dates
- ¾C Chopped Walnuts
- ¼C Raisins
- ⅓C Vanilla Protein Powder
- 2t Vanilla Extract
- 4-6T Coconut Flour
- 1T Chia Seeds
- 1T Ground Flaxseeds
- ¾t Cinnamon
- ½t Ground Ginger
- Pinch of Nutmeg
- Combine carrots and dates in a food processor.
- Add spices, protein powder, vanilla and coconut flour.
- Transfer mixture from food processor to a mixing bowl.
- Mix in raisins and walnuts.
- Roll tablespoon-size bits of dough into balls and place on parchment-lined sheet.
- Chill.
- Bites can be kept in the fridge for a few days and they freeze well.
