That’s right, I’ve gone crackers. Completely crackers. I’ve been gluten- and soy-free since the beginning of the year and I’d be lying if I told you I didn’t miss crusty loaves of bread, glorious deep-dish pizza and yes, crackers! A good cracker serves as a vehicle to shuttle other morsels of goodness to the pie hole, am I right? Never fear, after some time in the test kitchen, I came up with a gluten-free cracker I actually like, and I hope you will too.

These crackers are made from gluten-free oats, a whole mess of seeds, and flaxseed meal for some Omega-3 goodness. They have a delicious depth of flavor and a rustic texture I really love. You’ll see what I mean in a minute. They’re a bit of a PIA to make because you have to flip them over mid-bake, but if you need to be gluten-free like I do, they’re worth it!

I love the crusty edges so much! These are great with cheese, guac, herbed butter or cream cheese….all the things!
Here’s how you make them:
Gluten-Free Seedy Crackers

- 1C Gluten-free Oats
- ½C Pepitas (pumpkin seeds)
- ⅓C Sunflower Seeds
- 3T Chia Seeds
- 3T Ground Flaxseed
- 3T Sesame Seeds
- 1T Poppy Seeds
- 1t Salt
- 2T Olive Oil
- 1T Maple Syrup or Honey
- ¾C Water
- Preheat oven to 375
- Combine dry ingredients in a mixing bowl.
- Add wet ingredients, stir to combine and let stand 10 minutes.
- Divide mixture in half
- Put each half on a separate baking sheet, lined with parchment
- Gently press and spread out until it's the thickness of a cracker (about ¼")
- Bake for 15-20 minutes.
- Remove from oven and carefully flip the cracker over.
- Return to oven and bake 15-20 minutes longer, until edges are crisp and brown.
- Allow to cool and cut or break into smaller pieces.

I eat flaxseed, chia and sunflower seeds every day – I might as well have them as a delicious cracker!
But then again – guess who would keep on nibbling away at them?
